About 6 weeks ago, I decided to put myself on a low-sodium diet and one of the basic food items that I had to do something about--because it's served with most meals and is LOADED with sodium--was bread.

After surveying what was available, among commercially-produced and locally-available products, I decided to look into bread machines and low-sodium recipes for them in order to make my own.

By the time I'd settled on what seemed like a good choice among the available machines, and had identified a few promising recipes, I'd been 3 weeks without any bread in my diet. Wah, wah, wah, right?

I'd also discovered that none of the local brick-and-mortar retailers actually carry bread machines anymore. That includes Target, Walmart, Bed Bath & Beyond, Costco, etc. (The shelf space they might once have occupied seems to have been taken by something called "hot air fryers." Why anyone would want to fry hot air is beyond my limited understanding of the retail market, not to mention the laws of physics.)

Anyway, I finally ordered my machine, via Amazon, and went to bed hungry for yet another week, awaiting its arrival. When it finally got here, the first thing I did was pull out the instruction book which was right on top when I opened the box.

And the first thing I read was that this machine was not suitable for making salt-free breads. With my stomach grumbling so loudly that I couldn't use the phone, I conferred online with the manufacturer's rep and explained my situation. And he kindly agreed to a full refund, plus shipping.

The next time I ordered, I was careful to confirm that my machine of choice had a salt-free option among its programs and then settled in for another week without salt or bread in my diet. (More wah, wah, wah.)

However, I've now gotten an email saying that I can expect delivery today! And so, even as the excitement builds towards the late-afternoon delivery time of this UPS zone, I have all my ingredients arrayed on the kitchen counter.

And I've also decided that if there are any hitches, this time around, I'm just gonna eat the GD'd box...
