Moroccan Beef Stew, Take 2

Made the Moroccan apple beef stew again and THIS time, totally rocked it! Found real sweet potatoes instead of those awful yams, used boneless beef short ribs for the meat (expensive but worth it), and cold-pressed, organic apple cider, probably from nearby Cortland, NY.

Told my son that it was one of the best things I'd ever made--as I was handing him his dinner, including croissants, a garden salad, and a slice of chocolate cake. (In the interest of full disclosure, the latter items were store-bought.)

I think he's gonna enjoy it, lol...

That's an interesting idea--and maybe closer to a traditional recipe, which mine is likely not...
